DISTILLED TO BE REMARKABLE

The Herrera Brothers built their distillery high in the Sierra del Tigre mountains of Jalisco, Mexico, where the hot days and cool nights allow for a unique aging process. INSÓLITO arrives from a slow fermentation process enhanced by the altitude, weather and natural spring water. It is twice distilled—in stainless stills instead of copper, preserving the authentic 80% highland x 20% lowland Blue Weber agave, to provide a smooth, clean finish. Finally, each tequila is aged in new American Oak Barrels.

INSÓLITO Tequila is a member of the Additive Free Alliance, meaning we do not add anything to our tequila that alters the aroma, flavor or color.

No artificial ingredients, such as glycerin, food coloring, sugar-based syrups, synthetic agave or oak extracts are added to enhance our tequila in any way. When you choose INSÓLITO, you get premium tequila in its highest and purest form.

The Process

Premium de Jalisco is owned and operated by brothers Octavio and Alberto Herrera, who employ a full-time staff of a dozen people — all trained to be experts in the craft of distillation. Together, they honor the traditional methods of tequila distilling, and blend them with unique techniques and complex learnings to build proprietary steam ovens, juice lines and stills. While this unique production adds time to the process, as with the slow food movement, it allows our high-quality ingredients to develop unparalleled flavor complexity and depth. Sometimes, there’s just no substitution for a little extra time.

Harvest

100% Weber Azul (Blue Agave) is purchased from contracted family farms only, to ensure quality and harvesting at peak season using only 100% Blue Agave Pinas, and blended at 80% highland and 20% lowland.

Step 2

Cooking

The agave plants are quartered and stacked in proprietary steam ovens that raise the stack more than a foot from the bottom, ensuring that there’s no bitterness from the bottom rows boiling in their own juices. After the first 3 hours, the initial juices are pulled and discarded to be used as animal feed. The slow cook continues over another 20 hours, followed by an optimizing rest.

Extraction

The agave is then put through a line that is 2x the size of an average line, and 4 stations to extract final juices while ensuring minimum breakage, which keeps bitter fibers from entering the process.

Step 4

fermentation

We use a very slow fermentation process due to altitude and temperature. Open Air yeast starts the process, which takes 4 days (average is 2-3) to complete. We wait a full 8 days before the second fermentation process starts. The second fermentation is done in closed tanks to maintain evaporation and aroma.

Step 5

Distillation

INSÓLITO is distilled twice in custom-designed, stainless steel Alembic pot stills with a proprietary long neck and steep slope. This slows down the distillation process to approximately 10 minutes per liter vs. 2 minutes per liter (5x longer) in an effort to ensure the product that comes off the still at 105 proof maintains as many flavor notes as possible while producing a very clean spirit.

Barreling

Using new American Oak Barrels is very unique to INSÓLITO, and adds another layer of beautiful flavor notes. Being at such an altitude, the seasonal changes allow for the flow of product in and out of the barrels’ wood. Our barrels are virgin American Oak and toasted at a 2.5 char, which primes the barrels to release exceptional flavors usually reserved for bourbon. Our Reposado is aged between 6 and 10 months for approximately 8 months and our Añejo for between 20 to 24 months.
